Questions

What people ask about these pans

Do these pans have a coating?

No. The maker lists no coating on either line. Your food cooks on bare 18/10 stainless steel, brushed on our 1826 pieces and polished on Castel'Pro. The aluminum that spreads the heat stays inside, sealed in the base on 1826 and between the steel layers on Castel'Pro, so food only touches the stainless.

Where are they made?

In France, every piece. The pans and pots come from Cristel's own factory in Fesches-le-Châtel. The 1826 glass lid is made in France by another company, as stated by the maker. We don't list anything made in China.

What's the difference between 1826 and Castel'Pro?

The difference is where the aluminum goes. On our 1826 line it sits in a three-layer disc under the base, and the walls are single-layer stainless. Castel'Pro runs five layers, three of them aluminum, through the base and up the walls. For soup, rice and braises, 1826 does the job for less. For searing and pan sauces, Castel'Pro is built for it. More in our guide to the two lines.

Do they work on induction?

Yes, both lines. The maker lists induction, gas, electric, ceramic and halogen cooktops for every pan and pot we carry. On 1826, the outer stainless of the base does the induction work. On Castel'Pro, it's the 18/0 stainless on the outside.

Can they go in the oven or the dishwasher?

Both. The pans and pots go in the oven up to 550 F, and the 1826 glass lids up to 400 F. Castel'Pro can go under the broiler too. The 1826 pages don't mention the broiler, so we'd keep those pieces out from under it. Everything here can go in the dishwasher. Towel it dry afterward, or your tap water leaves white spots.

Will food stick?

It can, the first few times. Heat the empty pan, then flick in a few drops of water. When they bead up and skate around instead of fizzing away, turn the heat down a notch, add a thin film of oil and put the food in. Leave it until it lets go. Our guide to cooking on stainless without sticking has the rest, eggs included.
